【摘要】:ThisInternationalStandardspecifiesamethodforthedeterminationofthecompositionoffattyacidswhichareesterifiedinthe2-position(βorinternalposition)ofthetriglyceridemoleculesinanimalandvegetablefatsandoils.Becauseofthenatureofpancreaticlipaseaction,themethodisapplicableonlytofatsandoilswithameltingpointbelow45℃.Themethodisnotunreservedlyapplicabletoallfatsandoils,particularlythosecontainingsubstantialamountsof-fattyacidswith12orfewercarbonatoms(e.g.copraoil,palmkerneloil,butyricbutterfats);-fattyacidswith20andmorecarbonatomsandofahighdegreeofunsaturation(morethanfourdoublebonds)(e.g.fishoilandmarineanimaloil);-fattyacidswhichhavesecondarygroupscontainingoxygen.NOTE—Fattyacidswithdoublebondsinthe(n-16)to(n-11)position(e.g.petroselinicacid)areconvertedonlyveryslowlybypancreaticlipase.Thismayleadtowrongresults.
